Hello my lovely Vancouverties,
I'm at LAX airport right now and just had a chokingly dry burger & greasy fries waiting for my flight to New Zealand (I was starving and desperate!). As I type this to you, I feel the heaviness in this style of food both on my mind and belly. I am daydreaming of Chef Heather's Japanese dinner with gorgeous fresh and sustainable fish and the clean, clear conscience of eating foraged greens. Chef will be hunting
for wild greens like Siberian lettuce for the dinner this Saturday. (There's a few tickets left, grab them below if they're still available)
I'll be sending you some food travel inspiration tidbits from New Zealand in the coming weeks as they have, bountiful farmers markets, the freshest fish and best dairy in the world (I could eat their butter by the spoonful) plus it's summer there!
JAPANESE KAISEKI DINNER
Sat, March 9th at 6:30pm
Our foraging chef, Heather Dosman, will be putting a modern twist on a traditional Japanese kaiseki (multicourse) dinner. She will forage for early spring greens like this Siberian miner's lettuce for you and use only seasonal, local ingredients. Our spin on traditional shojin is adding sustainable fishes to the dishes, but we're happy to make it vegetarian if you like too.
KAISEKI MENU
Salmon onigiri, tsukemono
(salmon rice ball, seasonal pickled vegetables)
Geoduck & kanpachi sashimi
(geoduck and kanpachi, wild greens, nama shoyu)
Kabocha no nimono
(squash and winter vegetables simmered in dashi)
Miso Saba
(grilled mackerel, sushi rice, seaweed, mushroom)
Nikonda tofu
(tofu & celeriac steamed with stinging nettle)
Matcha jelly & matcha tea
(Matcha jelly, toasted rice, citrus)

Forager Report for March:
The first greens of the season are starting to pop up even though it's still chilly outside for this time of year. Keep an eye out for bittercress(pic), young nettle shoots and dandelion. They're at the microgreen stage right now so they should be really tasty and full of nutrients. Pick your stinging nettles with gloves and blanch them in boiling water to remove the sting. A great book for wild, native
plant ID is Plants of the Pacific Northwest (Pojar), arming yourself with this book is a great way to start getting to know the plentiful, edible plants of BC.

James Beard award winning chef, Bruno Feldeisen from France is our guest chef at the Swallow Tail secret supper club. You also may know him as a pastry judge on TV’s, “The Great Canadian Bake Off” and formerly from his work at Lumiere, Yew and the Four Seasons New York. He will cook for a lucky group of Swallow Tail members at the long table.
Collaborating with him will be our own fabulous pescatarian Chef Natasha Sawyer (Burdock & co) on a six course menu.
