It amazes me at what humans have decided is disgusting or divine in different cuisines around the world. I'm in Thailand during the holiday season this year, so let's take Thai vs Western food culture. Bugs. You find them in markets all over Thailand deep fried to a crispy
salty finish with herbs like keefer lime leaves and chilies for spice. Locals love them, most western tourists gawk at the food stalls and are completely grossed out. But why, they taste like a juicy crisp chicken wing or potato chips really, salty and crunchy, no? And, insects are nutritional powerhouses, packed with fatty acids, protein, vitamins, minerals and fibre. The
little ants and grasshoppers are the easiest on your mind and are really yummy and a sustainable protein. In Thailand, the scorpions and spiders on a stick are really hard to bite through, but those are only for dudes to dare their friends to eat, none of the locals eat them either.
We have lots of bugs we could eat back home in Canada and someday soon we will when meat becomes too expensive or we decide we care about the planet more than our stomachs:) In the past 4 years, roughly 25 companies that specialize in edible insect food products have been launched in Canada, and in the
U.S. Most focus on cricket flour energy bars and cricket chips, so expect bugs to come to Whole Foods soon so you can eat them too, though I would vote Thai spicy lemongrass crickets superior by far.
