I'm continuing my Gulf Island adventures in foraging on youtube, keeping myself and hopefully you, entertained during this crazy time. This week, a quick chat about spring oyster mushrooms, check out my own secret forest stash.
Oyster mushrooms like to grow on dead alder wood, so at this time of year they're cropping up by the bushel in coastal BC forests. I fried mine up and made a wild mushroom ratatouille today by layering mushrooms, zucchini, eggplant, tomato sauce and a homemade nettle ricotta filling. Here's the recipe.

Update: We're looking for a venue to use as a takeout window currently, so this is on hold for now. As Container Brewing (our old space) ramps up for a reopening hopefully in June, they need to do some renovations to comply with the new covid regulations, so we can't do it there as planned. We'll partner up with them again soon.
