Hi ,
Have you ever picked Osoberry? A native berry found at the coast and near forest edges in Vancouver. They taste like ripe cherries and cedar but with a cucumber aftertaste, sort of sweet and savoury. They are truly unique in flavour and are best made into a shrub/drinking vinegar. A super popular drink nowadays, you mix equal parts by weight of vinegar, sugar and ripe fruit. Add
some rosemary or peppercorns to give interest to the final bouquet and add soda or Prosecco to finish for a summer cocktail. Here's my recipe for an osoberry drinking vinegar, you can substitute ripe apricots or cherries if you can't find osoberries.
