I'm back from the Okanagan after a successful porcini mushroom hunt, though I was a bit late. Early August would have been better as a lot of the areas were picked over by the commercial harvesters already. Look at this cute little guy!
Porcini are one of the tastiest mushrooms to eat raw, in Italy I had a lovely dish with thin sliced porcini, oregano, thyme, good olive oil and cracked salt... that's it - beautiful! Most mushrooms I wouldn't eat raw as they are hard for humans to digest, but a small plate of raw porcini was never an
