Why do we eat so much seafood in summer? It's so strange as that's when seafood is the least fresh and the most funky tasting from spawning and muddy river outflow. Winter is the true time to eat from the offerings of the sea like crab, seaweed, oysters, clams, uni and mussels. Water
quality is at it's highest, you can see 100 feet straight on a dive, it's crystal clear and you can taste it.
Chef life: On Dec 14, there is an extreme low tide, so I'll be out freezing my 'toes' off, harvesting uni in the Southern Gulf Islands and will report back on the harvest with some new cooking videos with urchin. One will be my recipe tests for a fresh seaweed stock based uni chowder and we'll be serving more lovely chowder at our winter foraging series next year...
WINTER COASTAL FORAGING LUNCH
Meet us at the beach to lunch and learn what delicious foods are harvested in winter with our chef & foraging team. This trip is for people that want to learn to survive on coastal food. Chef Robin will teach you how to sustainably gather her favourite winter foods like seaweed, shellfish, crab and nutty winter roots like cattails and burdock. Trip includes a big, steaming hot bowl of her famous chowder with fresh
bread and butter for lunch. We’ll meet at the beach for this adventure, bring your own beach chair (so we can distance appropriately) and a hot cuppa, bundle up and we’ll do something fun to start the new year.
SECOND FLUSH OF FUNGI
The weather is so mild that many areas are seeing a second crop of fungi this year. On our mushroom trip Sunday, we found lobster mushrooms, chanterelles, oyster mushrooms, witches butter, fluted elfin saddle and even hideous gomphidius - all edible. It must be seen to be believed, so come out this Sunday for our last trip to teach about edible forest fungi.
