SPRING FORAGING TRIPS
Infield trip will focus on how to SAFELY identify wild edible trees, roots, herbs, shoots and leaves and dozens more edibles that you will never find in the grocery store! Our ever-popular “Wild Edible Identification Trips” are 2-hour wild plant identification trip and they book up fast!
Learn tips and tricks on how best to cook and preserve tons of different wild edibles from burdock root to birch leaves. (note: this is not a live cooking demo or a harvesting trip, ID only).

WILDFLOWER SEASON
Flowering currant (Ribes sanguineum) is flowering all over coastal BC, they are hands down my favourite edible flower. The video below is how to make a simple syrup with the blossoms, add your favourite booze and you have a true welcome to spring!
Wildflower Gin Fizz Recipe
You can omit the egg white if you want a simpler recipe or if you are vegan.
INGREDIENTS
- 2 ounces gin (vodka if you don't like gin)
- 1 ounce lemon juice, freshly squeezed
- 3/4 ounce wildflower simple syrup (recipe in video)
- optional - 1 egg white (about 1/2 ounce)
- soda, to top (about 1 ounce)
- crushed ice
- garnish with flower petals and slice of orange or lemon
STEPS

Add the gin, lemon juice, simple syrup and egg white to a shaker and vigorously dry-shake (without ice) for about 15 seconds.

Add 3 or 4 ice cubes worth of crushed ice and shake vigorously until well-chilled.

Double-strain into a chilled Collins glass and top with club soda.
COASTAL FORAGING LUNCH
Meet us at the beach to lunch and learn what delicious foods are harvested at the sea with our chef & foraging team.. Chef Robin will teach you how to sustainably gather her favourite winter foods like seaweed, shellfish, crab and stranger fare like urchin. Trip includes a big, steaming hot bowl of her famous chowder with fresh bread and butter for lunch. We’ll meet at the beach for this adventure, bring your own beach
chair (so we can distance appropriately) and a hot cuppa, bundle up and we’ll do something fun to start the new year.
