Spruce/Fir Salad Dressing
A quintessential Pacific Northwest spring ingredient, conifer tips like spruce, fir and pine needles sprout, bright green and full of fresh lemony/rosemary like aromas. Great when used as a flavouring in sauces, marinades and cocktails. Here's one of my favourite dishes, a simple conifer tip vinaigrette drizzled over fresh ripe tomatoes as a side dish.
