Syrups, vinegar, tea...
There are so many ways to play with wild Birch as food. Birch (Betula species) has edible leaves, sap and even the inner bark (cambium) can be used to make flour for cookies! The flavour is amazing, use the young spring leaves as green tea by simply pouring hot water over them to steep. It's such a comforting aroma, peppery and refreshing. Today, I'm making a vinegar tincture for marinades and salad
dressings. Pick a handful of paper birch leaves, macerate in apple cider vinegar for 1 month, strain the leaves and you have a beautiful digestive vinegar. Simple! To learn more about how to safely identify, find and cook with birch, spring mushrooms and a ton of wild spring greens check out our Spring foraging online course. Member pre-sale is happening right now. I'm also happy to run private trips, email me for info.
