Blue elderberry plants flower in spring, they are a true culinary treasure that can be found from Vancouver Island to the Okanagan in BC. Harvest the white flowers and make them into a simple syrup to flavour cocktails or to use in desserts and baking. This week, I'm experimenting with using my
sourdough starter to make elderflower hot cross buns. You can also use rose syrup or orange blossom syrup in a pinch if you haven't found your own harvest patch yet.

Pine cone molasses is a delicious concoction that is made in Northern Italy and called Mugolio. I thought I'd try my hand at fermenting my own batch this spring. I harvested the green small, soft cones of Scot's pine, mixed them with equal parts organic brown sugar and then set them in a cool place to
macerate for a month. The syrup that is created is like a forest scented molasses, you can drizzle it on pancakes or add it to drinks. Check the video below for details...
