As much as it seems like summer time is seafood time... it's not. Winter is for seafood, the water is cold and clean and the shellfish get fat! I've been foraging the coasts and these little oysters are looking just about my size.

Fun fact: There are only two species of oysters Pacific and Olympia on the Westcoast. In restaurants, all those fancy oyster names tell you how are cultivated or where they came from rather than what they are. Oyster farmers offer you a taste of place which is beautiful, but harvesting your own is even more fun.
