Truffles are the diamonds of the kitchen, meant to be delicately served and slowly savoured. In BC, we have both wild and cultivated truffles that can be found like the Oregon Black Truffles (Leucangium carthusianum), and Oregon White Truffles (Tuber spp.). Animals like flying
squirrels find them at night by following their noses to the pheromone like scent of the fungi that thrive in symbiosis with the roots of trees like Douglas-fir and hazelnut. Luckily humans have learned to cultivate them and they can be found in the forest by a well trained truffle dog.
