Eat your greens!

My partner loves to call me a 'salad pusher'. I'm even more like that in spring when all the new greens are beckoning to be made into delicious meals. My upcoming spring forager supper isn't just about salad though, far from it. I'll be roasting spring mushrooms like this spring king (porcini) for dishes like Melazane alla Parmigiano, a layered eggplant dish which melts in your mouth!

Pine cone syrup recipe with Chef Robin

One of the dishes I'm hopeful I'll be able to make is Mugolio syrup over hot popovers and whip cream for dessert. Mugolio is a pine cone syrup that tastes amazing. Cross your fingers that I'll spot some green cones growing in April to harvest.
