Squat Lobsters!
I'm on the island this week and have been cooking some unusual seafood. Squat lobsters and Pacific lord was gifted to me by a local fisherman (bycatch), so we grilled them on the fire and I must say, Squat lobster though tiny are delicious! They taste like sweet rich lobster, I used all the shells for a great smoked stock
too. So if you go out prawning and catch these instead, count yourself lucky. Learn more about unusual seafood that you can harvest with me on a sea foraging class this summer!
