, horse clams are a true delicacy, the siphon or neck of the clam is sliced thinly and served as you would geoduck as sashimi or ceviche.  To dig for your own head out to Birch Bay on a very low tide this spring and look for quarter sized holes in the sand.  It's really sweaty work, but so worth it, I just got back from a dig on Earth Day.  As a primer for your own adventures, come out with me on a sea foraging class this May 14th and I'll give you all my tips and tricks for harvesting everything from seaweed to sea urchin from the sea shore without a boat.
