Our annual mushroom dinner at the Swallow
Tail supper club. I'm inviting you and your guests to my home kitchen to taste our harvest of wild mushrooms. Chef Jody Peck, Chef Madge McCulloch, Chef Chelseah Compton and myself will be cooking, we just finalized the menu, check it out below...
Wild Mushroom Feast on Nov 17+18th, 6:30pm - 159 for six courses + a discussion with the chef foragers about the mushroom harvest. Learn a little, eat a lot! We may have lobsters, cauliflower mushrooms, pine/matsutake, chanterelle or whatever
mushrooms we can harvest for the dinner. Vegetarian option available!
THE MENU
Mushroom carpaccio. Pickled, raw, sautéed. Parm, crispy shallot, green herb oil
Endive salad with matsutake, hazelnuts and
brown-butter dressing
Sunchoke puree with crisped hericium mushrooms, wild garlic confit, spruce oil
Morel & porcini crusted flank steak with glazed, fire roasted hakeuri
Mushroom ravioli, fresh buttermilk sauce, pistachio, garlic tuile

Hunt & Gather Dinner on Nov 25+26th, 6:30pm - This one is for
meat lovers! 159 for six courses + a chat with Chef Jody on her hunting adventures around BC and I'll talk about my harvest from the sea and land for the dinner. Some of our highlights will be either bison, elk or venison and definitely some wild mushrooms from my travels, seaweed bread and perhaps some delicacies from the sea as well like uni.
