Hydnum species or hedgehogs are the easiest edible mushrooms to identify for beginners in the wild. They do have 'teeth' but not like us, under their cap small spines hang downward and form the surface that the mushrooms spores are released from. Isn't nature cool! Once harvested, hedgehogs are firm, buttery, and excellent fried. My foraging friends are picking them in Prince George
right now, so mushroom season is off to a good early start, as the temperatures cool and the rain comes to southern BC you'll see these growing in mountains near you in the Squamish area and all the way to lower elevations later in the year.
