The American bullfrog, a species brought to BC to be farmed for food, has been spreading rapidly since they were released into the wild by humans. These bullfrogs consume native frogs and anything that fits into their large mouths including but not limited to ducklings! These frogs destabilize fragile wetland ecosystems that have supported Indigenous communities, local biodiversity, and
water quality for generations.
Harvesting and rethinking the use of over-abundant or invasive species is one way to rebalance our relationship with nature. So, I went out bullfrog hunting with a local herpetologist working to protect native Oregon spotted frogs. I caught some and then fried them for the first time this summer.
They were delicious, very similar to chicken. Chefs, academics, and advocates are exploring ways to address many over-abundant species like these.
