It's hard to find Sri Lankan food in Vancouver, so I didn't know what to expect when a chef friend introduced me to Chef Thoshan's cooking (currently cooking at Good Thief Restaurant, IG @The_SecretChef). I tasted lots of bright green herbs and complex flavours made with whole spices like chili, tamarind, cinnamon, cloves, cardamom, coriander,
mustard seed, lemongrass and cumin, the dishes he presented were like nothing I've ever tried before. Stand out dishes were; a noodle/rice called string hoppers the texture was so cool, an addictive fermented Maldive fish and potato dish, his coconut roti topped with wild foraged herbs like sorrel and oxeye daisy leaf with Gotu kola and his tamarind chicken curry dish, dark and deeply spiced. I stuffed myself and still wanted more! The meal was so delicious, I asked him to share a
taste of his homeland with all of you. Soo......
