Smell the fresh forest air, feel the warm summer breeze on your face as you hold an icy wild cocktail in your hand this Saturday at our annual Wild Bar  created for the foraging curious. 

Chef + Sommelier Robin Kort’s summer wild harvest will be extracted into syrups, tonics and bitters for the cocktail menu. Your ticket includes one cocktail of your choice and a stroll through the forest with a biologist to identify all the edibles we encounter.

Wild Elderflower Gin & Tonic

Lime, furikake salt rim

Savage Rye Sour, sweet cicely, sour cherry, lemon

Tinto de Verano - Rioja + Lemonade, flowering currant and oregano flower,sorrel

Magnolia Shrub & Soda – Non-alc or spiked

(Foraged ingredients will be added to these base cocktails depending on what the season offers, from wild flowers to aromatic leaves and roots)

• Exclusive event for Swallow Tail members at Malcolm Knapp Research Forest
• Pick your first cocktail and we’ll have it waiting for you at your wildcraft walk time of 4, 5 or 6pm that evening.
• After your forest walk, guests are welcome to stay and enjoy more drinks until the bar closes at 7:30pm
