Take a look at the underside of the hedgehog mushroom cap, notice the teeth like projections dangling down.  They are so distinctive and weird looking, right? Nature is cool:) That's why white/cream hedgehog mushrooms are one of the easiest mushrooms for new foragers to identify.  Delicious fried in butter and added to everything from a topping to rice or steak to tossed into a pasta, hedgehogs are the best November mushroom.  They are quite firm and keep growing even when the weather gets wetter and colder.    Wild BC truffles can also be found in November.  Even as the snow comes, switch then to eating clams, mussels and fat crab.  The colder the weather the better the seafood.  Smart cooks and eaters move with the seasons, leave the tomatoes for summer and eat shellfish in winter!
