Chicken of the woods (Laetiporus spp.) is bright yellow-orange and the young growth edges of the mushroom have the texture and mild taste of chicken. I spotted one yesterday too high up to harvest on the North Shore mountains, I was so sad. Look for them on dead trees and simply cut the soft edges off, the harder parts can
be quite bitter. It's one of the many mushrooms that must be cooked very well to be digestible and if you're trying them for the first time it's wise to do cook a spoon sized portion to make sure your body likes the fungi as a small percentage of people can have allergic reactions.
