What's warm, tangy, earthy; the best cure for a fall cold?

Published: Thu, 09/15/16

I have a cold this week and it's dragging me under, so I cooked up a batch of  my wild mushroom pate recipe and am feeling much better (maybe that's just because it's so darn tasty?). You may have been told that mushrooms have no nutritional value which is solid bull *$#!  Excuse me.  Here's short list of nutritional benefits of a few edible mushrooms that you can find in our forests and farms. - Chef Robin
  • Oyster - High in protein, fibre and iron, and contain significant levels of zinc, potassium, selenium, calcium, phosphorus, folic acid, and vitamins B1, B3, B5 and B12, plus vitamin C and vitamin D
  • Chanterelle - Contain anti-microbial, anti-fungal and anti-bacterial properties. This mushroom is also packed with vitamin C,  D and potassium.
  • Shiitake - A rich source of vitamin D. It helps fight infection and strengthens the immune system.
Or just come to one of our October supper clubs with some friends, that'll make you feel better too!
