Sorry, I feel like a jerk for this resent email, folks!  I put the wrong date in, it's Friday, Dec 16th for the German Xmas Feast. My apologies. - Chef Robin

It's not a Zungenwurst which is a mix of  blood, oats & tongue, thank God!  They DO eat a beautiful, savoury roast goose.  You and your friends are invited to  the Swallow Tail long table for this modern take on a traditional German feast this Christmas.

The talented Chef Erin Vickars (The Vancouver Club/Bishops) has just returned from a stage at Atelier Crenn in San Fransisco to create a fabulous 6 course menu for you inspired by a traditional German Christmas with succulent goose as the main centerpiece.

Pacific Blue Mackerel
(yes, white fish is traditional)
White onion, green apple, bonito broth, Riesling

Candlelit course
(It's a surprise!)

Raclette Fondue
Toasted dark bread, pickled grapes, sumac, house mustard

Traditional Roasted Goose
Pine Smoked breast, confite leg, Pink Lady apple puree,
Winters vegetables

Gluhwein
Traditional spiced wine course

Apfelkuchen
Winter apples, baking spice, sweet pastry
