Never know which wine to bring to dinner parties? Chef and sommelier Robin Kort will walk you through a wine 101, teaching you the basics of how to really appreciate wine and how it works with food.  Five wines will be paired with canapes and cheeses and we'll explore what works and what doesn't together answering questions like; What wine pairs with salmon? Why doesn't any wine pair with artichokes?  And what is umami anyway?  Welcome to a casual and enlightening discussion with Chef Robin and get to know your senses better. ONLY 15 seats!

The talented Chef Erin Vickars (The Vancouver Club/Bishops) has just returned from a stage at Atelier Crenn in San Fransisco to create a fabulous 6 course menu for you inspired by a traditional German Christmas with succulent goose as the main centerpiece.

(yes, white fish is traditional)

Toasted dark bread, pickled grapes, sumac, house mustard

German Christmas Gluhwein Recipe

An easy recipe for piping hot spiced wine to celebrate the holiday's with.
Prep Time: 45 minutes.  Servings: 6.

Ingredients:

  • 1 bottle red wine (merlot, malbec, something fruity)
  • 3/4 cup water
  • 3/4 cup white sugar
  • 1 orange juiced
  • 3 pieces orange peel (1cm x 5 cm pieces)
  • 1 cinnamon stick
  • 10 whole cloves
  • 1/8 tsp cardamon (not traditional, optional)
  • 1/2 cup dark rum or bourbon (the bourbon is not traditional)

Preparation:

  1. In a medium size saucepan, combine the water, sugar, spices. Bring to a boil while stirring constantly, then reduce heat and continue to simmer.
  2. Add orange peel and juice.  Cook until the mixture starts to thicken like syrup.
  3. Pour in the wine and rum (if using) and stir, heating gradually until steaming. DO NOT BOIL. Remove orange peel/spices and serve in pretty little tea cups if you have them.
