1st course - Coho - Cured
& cold shaved. Fresh cream, wild sheeps sorrel, lemon ice
2nd course - Sockeye - Wild caught, pickled daikon, citrus juice, chili
3rd course - Pink Salmon - Humpback, fire
roasted, egg yolk, alliums
4th Course - Steelhead - Cold Smoked, lovage, grapefruit, Melba
5th course - Ivory Salmon - Stone fruits, inter-tidal veg, buckwheat
6th Course - Wild Berry Financier - Pine pollen, underbrush tips, cultured cream
