Ivory Salmon is "The most succulent and flavorful of all salmon, Ivory salmon is a luminous white fleshed King salmon native to Alaska/Canada. Most salmon get their typical red color from carotene in the food they eat (crustaceans such as shrimp), but Ivory Kings are genetically predisposed with an extra enzyme to process carotene rather than collect it. Ivory salmon tends to be silkier and more buttery in flavor than it's red cousins. Ivory salmon are rare and difficult to find, but you can taste one at our Wild Salmon Feast on Nov. 25th.  Details below...

Is salmon one of your favourite fish? This is the supper for you and all your pescatarian friends. Master of the sea, Chef Erin Vickars, celebrates the most regal fish in BC with a lavish six course feast at the Swallow Tail secret Supper Club in Vancouver. This is a one time pop-up menu and the tickets sell fast so catch them quick.


WILD SALMON FEAST

1st course - Coho - Cured & cold shaved. Fresh cream, wild sheeps sorrel, lemon ice

2nd course - Sockeye - Wild caught, pickled daikon, citrus juice, chili

3rd course - Pink Salmon - Humpback, fire roasted, egg yolk, alliums

4th Course - Steelhead - Cold Smoked, lovage, grapefruit, Melba

5th course - Ivory Salmon - Stone fruits, inter-tidal veg, buckwheat

6th Course - Wild Berry Financier - Pine pollen, underbrush tips, cultured cream

Inspired from his recent culinary adventures in South America, Chef Kristian (Bacchus at the Westwood) is creating a one time only 5 course menu for Swallow Tail members.  A Latin inspired menu made lovingly with the best of BC's harvest season.
