Swallow Tail Culinary Adventures

It's hard to find in Vancouver.  Solution:  Make your own!  I went to Thai cooking school in Northern Thailand in December, just got back and am so excited to share some of my favourite recipes with you!

Most of the Thai restaurants in Vancity focus on dishes like pad Thai noodle stir-fry and basic curries, papaya salad and sticky rice with mango, all super yummy dishes, but there is so much more to Thai cuisine that we're missing out on.  There are several distinct cuisines in Thailand, one of which I studied (read: ate a LOT of food and went to a few amazing cooking classes) which is Lanna cuisine (Northern Thailand).  One of their most popular dishes is Khao soi, a coconut, red curry  noodle dish that is topped with deep fried noodles, green onion, pickled cabbage, chili and goodness.  (Recipe is coming soon)

Esaan(Isan) cuisine in the North East which is much more influenced by Laos.  Very little coconut milk is used in their dishes as it's not a native plant to the region.  My standout dish was the sun-dried grilled pork with lemongrass and green peppercorn served with sticky rice and fresh beans.

I'll be adding recipes to my blog as I tweak them here at home.  I'll start with a recipe that I ate almost all the time for breakfast in Thailand called Khao Tom (ข้าวต้ม) which is great for anyone coming out of the holiday gorge-fest that's wanting to simple, tasty, healthy food.

If you are going to Chiang Mai, Thailand in the future be sure to look up Chef Lin for a Northern Thai cooking class or two, she'll knock you're socks off.

Chef Sarah Robinson is creating six courses at the secret supper club inspired by Fire!  Ouch!  I'll be creating a special greeting drink for y'all.  There is one table in our private room (seats 2-4) and of course the wine cellar room and green room are long table seating.  Only 26 spots.
