Swallow Tail Culinary Adventures

“My travels around Asia were about learning about native ingredients and regional dishes from the Vietnamese locals. I went markets in small villages, met the farmers, and cooked with people in their homes. Getting to spend time with people from all over Vietnam and Thailand is what has really inspired my upcoming menu at the supper club and culinary flame within me”

Dinner with Chef Kristian, Saturday, March 10th

You're invited to the underground supper club where guest chef, Kristian Leidig, will create a sumptuous six course feast inspired by his recent travels to Vietnam and Thailand. Meet some new food lovin' folks in Vancouver at the long table with us.

1st course

Bahn mi canapé & Northern style pho broth

2nd course

White shrimp in tamarind sauce with crispy rice noodles and spinach salad

3rd course

Caramelized pork belly in shallot & chili with jasmine rice, sawtooth, Vietnamese mint

4th course

Sablefish with fresh turmeric char-grilled in banana leaf

5th course

Lime braised beef with daikon and carrots, shredded green banana, scallions

6th course

Banana & lychee coconut milk pudding
