I'm just back from Italy today and was excited to see how the wild mushroom season is shaping up out in our forests. So, I went out for a quick hike to see how many edibles I could
find. Puffballs, zeller's boletes, angels, chanterelles; wow, there's a lot fruiting for such a dry year it seems. Below is a shot I took of a Boletus zelleri (Zeller's), an edible related to the famous porcini. I ate some amazing porcini dishes in Italy, so I wanted to try to recreate some of the dishes here with these.
