What to forage for in winter? Well, right now there are fall oyster mushrooms that are edible and grow into winter (bit bitter sometimes though). Panellus serotinus - found growing in conifer forests growing on dead wood with a similar structure to oyster mushrooms, but orange and dark green/grey.
