Our dates are booking up for winter, so Email us soon if you want to hold a date. The Forager Report: From last weekend's hunt, this is a 'Prince' mushroom (Agaricus augustus) and can be as large as a small
watermellon. It is one of the tastiest mushrooms and smells of anise. The key to ID is it's bulbous shape, anise smell and yellow staining reaction. Be cautious as there are some look alikes that can make you sick, when in doubt, throw it out:)

How to cook the 'Prince' mushroom (Agaricus augustus)
Prince mushrooms are best fried in with just a dab of butter in a hot cast iron pan, they crisp up nicely. Great topping on rice or even better, a nice steak.
