James Beard award winning chef, Bruno Feldeisen from France is our guest chef Jan 5th at the Swallow Tail secret supper club. You also may know him as a pastry judge on TV’s, “The Great Canadian Bake Off”. He will cook for a lucky group of Swallow Tail members at the long table. Collaborating with him will be our own Chef Heather Dosman (Acorn/Farmer’s apprentice/Existential

The Forager Report:
Hmmm, it’s getting cold out there, and all the edibles are gone or hiding. But if you’re caught out in the backcountry starving, my advice would be to find a sword fern. As long as there isn’t too much snow cover, you’ll see these big evergreen ferns poking out of the underbrush. First Nations peoples would dig the roots of the sword fern and cook the starchy root if times were tough. Definitely not haut
cuisine, but if you’re in a pickle.
